Tasted from barrel, the 2016 Cabernet Sauvignon Estate reveals notes of cassis, blackberries, licorice and pencil shavings. On the palate, it's full-bodied, ample and powerful, amply endowed with fine structuring tannins and concluding with a long, dry finish. After the Merlot-, Cabernet Franc- and Malbec-based cuvées, this represents a return to the authority of Cabernet Sauvignon.Rating:92-94

This is a great way to experience the richness of Daou without hurting the bank account too much. Hedonistic aromas of candied black cherry, caramel, vanilla cake and cola lead into a rich and powerful palate that's soft in texture and lively with exotic plum and black currant flavors.

Just bottled, the 2016 Cabernet Sauvignon is another outstanding wine. Black currants, licorice, charcoal and lead pencil notes all flow to a full-bodied, silky, polished and elegant Cabernet that's a delicious drink. Like the 2015, it was aged 11 months in 60% new French oak.

Situated on a 212-acre hilltop estate in the Adelaida District of Paso Robles, this remarkable mountain was once described by André Tchelistcheff, legendary winemaking authority, as "a jewel of ecological elements."
DAOU Mountain stands alone at an elevation of 2,200 feet, rising from the heart of the Adelaida District in the rugged coastal range west of Paso Robles. The steep slopes here reach up to 56 percent, with uniform exposure to the elements across the estate. It is a terroir of power, purity, and symmetry with every natural asset necessary to pursue the perfect Cabernet Sauvignon—including calcareous clay soils that emulate Bordeaux’s Right Bank and a climate that mirrors St. Helena.
