This wine is a blend of Cabernet Sauvignon Niner farms at both Heart Hill Vineyard and Bootjack Ranch. In 2018 they hand harvested the grapes throughout the month of October. This slow, methodical harvest allowed them to capture the complex spectrum of flavors that Cabernet Sauvignon is revered for: dark cherry, brushy herbs, chalky tannins and full-bodied fruit. Niner de-stemmed the grapes and fermented them in stainless steel tanks. A portion of the fruit was co-fermented with Petit Verdot. Only free-run juice was used in the bottling and Niner aged it in 50% new French Oak barrels for 21 months before bottling.

Blend: 88% Cabernet Sauvignon, 9% Malbec, 3% Petit Verdot

    Fresh blackberry aromas are cut by wood, forest undergrowth and hints of char on the nose of this bottling, which also includes 9% Malbec and 3% Petit Verdot. The wood spice is even more prevalent on the palate, providing a foil to the freshly smashed blackberry, oregano and marjoram flavors.

Niner Wine Estates is a family company dedicated to the concept that truly great wine results from talented people controlling the entire winemaking process from the vineyard to the glass. Founder Richard Niner's attachment to farming started early as he grew up farming a small plot of land with his father in rural West Virginia. Niner then followed a somewhat unusual path from farm to vineyard: after putting himself through college and graduate school, he spent over 30 years investing in small businesses. In 1996, one of these business deals brought him to San Luis Obispo County, where he found a renewed passion for farming and saw a bright future in the local wine industry.

At Niner Wine Estates they only make wine from grapes we grow ourselves. From vineyard to glass our entire team is working together with a singular goal in mind: to provide you with wines that combine within them a true expression of our vineyards and the creativity of our people. They farm three separate estate vineyards: Bootjack Ranch resting on the Eastern side of the Paso AVA, Heart Hill Vineyard settled on the Western side, and Jespersen Vineyard nestled in the Edna Valley AVA to the south. Each vineyard has very different soil profiles and climates resulting in three very unique representations of terroir.

As Paso Robles, California has soared in number of wineries and gained in popularity, Cabernet Sauvignon has firmly taken root as the region’s number one varietal. Alone, it accounts for just over 40% of plantings and is grown throughout both the western and eastern sides of the appellation. Though viticulture here dates back to the 18th century, Cabernet Sauvignon didn’t emerge as a significant grape here until the 1970’s. But since then it has definitely made up for lost time.

Legendary winemaker and consultant Andre Tchelistcheff first recognized Paso’s potential with Cabernet Sauvignon in the early 1960’s. The calcareous soil and dramatic diurnal temperature changes of Paso’s westside particularly intrigued him. Today modern winemaking techniques and focused experimentation with various clones, rootstocks and vineyard strategies optimize the region's ideal combination of soil and climate to deliver the best fruit possible.

The results are evident in the glass. Paso Robles Cabernet Sauvignon can be mesmerizing, with rich aromas and flavors of blackberry, cassis, black cherry, graphite, toasty oak, vanilla and spice. The structure, balance and unbridled opulence of these wines impress from first sip to last. Not surprisingly, Paso Robles Cabernet Sauvignons have steadily grown in reputation, not just in the U.S., but around the world.
